You can now unlock iPhone 4S on iOS 5.0 / iOS 5.0.1 using GEVEY™ Ultra S. GEVEY Ultra S will unlock GSM iPhone 4S with basebands 1.0.11, 1.0.13, 1.0.14. GEVEY iPhone 4S unlock SIM does not require the international emergency number 112 to be dialed and does not require the iPhone 4S to be jailbroken to unlock the iPhone. Hit the video after a break!

Those who are unaware, GEVEY Ultra S is a SIM interposer and the package includes a SIM tray along with a SIM. You need to insert the GEVEY Ultra SIM along with your SIM card in the gevey SIM tray and insert into your iPhone and it will then untethered unlock your iPhone 4S. GEVEY Ultra S also includes a GEVEY reset SIM in the package. It does not require any cutting or alteration to the SIM card.

GEVEY Ultra S is now available for preorder from here for $54.99. The ETA for the delivery is currently is within 1st week of March. ApplenBerry team is working on to unlock 04.11.08 baseband unlock and they have stated that it looks promising to unlock 04.11.08 baseband with GEVEY SIM, which is still not unlocked by any method.

Last month ApplenBerry had released Gevey Ultra SIM to unlock iPhone 4, 3GS on iOS 5.0/ 5.0.1 that used Furiousmod 2.0.0 to unlock the device.

Alternately, there are R-SIM and TP SIM SIM interposers also available to unlock iPhone 4S. Though non of them is currently tested and released earlier as compared to Gevey SIM which is already tested and used to unlock iPhone 4, it is currently most trusted and cheapest solution for unlock.
